Botanist Dining
A few weeks ago, I was lucky enough to be invited to a preview of the highly anticipated Botanist restaurant. Botanist replaces Oru inside the Fairmont Pacific Rim and is a stunning space designed by Ste Marie Design with branding by Glasfurd & Walker. The restaurant features a spacious dining room as well as a cocktail bar and lab, terrace garden and champagne lounge.
With a name like "Botanist", you'd expect a lush vibrant atmosphere and this restaurant delivers on that. The main dining area features a glass wall filled with more than 50 types of plants. The menu, developed by executive chef Hector Laguna, features ingredients sourced from the rich soils and waters of the Pacific Northwest.
Since we're on the botanist theme, why not go all the way and extend the theme to the drink menu? Beverage director Grant Sceney and head bartender David Wolowidnyk have created a very unique and refreshing cocktail program. With drinks titled "Pollenator", "Appleseed Lane" and "Can't Beet a Root", to name a few, you can imagine that each drink you try will have a unique "Bonanist" twist to it.

It was a fabulous evening. I can't wait to come back for a full sit down meal. Botanist Dining & Bar is surely another gem in the fine dining category.
